The Piedra Negra Chacayes (pronounced Cha-kai-yez) is a single vineyard Malbec, made from 90% Malbec and 10% Cab Sauv. The water of the plant is adjusted to make it live with a mild water stress. Green harvesting is done to promote concentration and maturation of the grapes that remain. Partial fermentation took place in 400L French oak casks with a rotation system. Wine was macerated for one month, followed by Malolactic fermentation with weekly stirring. 40% of the juice was eliminated and ageing took place for 24 months in new French oak. Pairing suggestions: Grilled meats, refined ragouts, pasta with strongly flavoured sauces, mature cheeses.
Intense red-maroon colour with red fruit and coffee notes. Complex, voluminous, with mature tannin’s, equilibrated, highlighting the red fruits with black flower notes and a persistent finish.
