Crimson Badger Brewing

In the bustling heart of a craft beer bar (Atlas Beer Cafe) in Queenstown, New Zealand, an unusual friendship began to brew. There was Sam, an Australian wanderer with tattoos etched into his dreams, and Wes, a Canadian ginger who could down maple syrup as smoothly as he strode into any room. From their first encounter, Sam was skeptical of Wes’ tucked in shirt, blinding pale skin, and keen approach to the bar service. A few rounds of whiskey, games of poker, and adventures later, these two grew to have a great friendship. The pair found a kindred spirit in their shared appreciation for alcohol, competition, and creativity. Against all odds, in 2017, they hatched a plan to create an alcoholic ginger beer, cheekily named Ginger Bear. With no prior brewing experience, little starting capital, and juggling full-time jobs, the ambitious duo founded Crimson Badger Brewing Limited.

Silent Pool Gin

​Silent Pool was started back in 2014 by two Surrey Hill locals, Ian McCulloch and James Shelbourne. They discussed the idea of setting up a small, local distillery. The two friends had a grand vision of making a truly sustainable distillery next to a fresh water source, producing handcrafted, artisan spirits using locally sourced ingredients, but first they needed the perfect location. After scouting many locations in the south of England, Ian happened upon Sherbourne Farm, on the banks of the magical Silent Pool in the Surrey Hills - an area of outstanding natural beauty. After getting the go-ahead to restore the dilapidated farm buildings from the landowner, Silent Pool distillery was born.

Green Fairy Absinthe

Original Czech Absinth, Green Fairy has an intriguing history that dates back to the dark ages of 1500’s. The Absinth has been carved out of an ancient culture using local woodland ingredients including wormwood - a herb used in early medicine. These herbs and botanicals are infused or “macerated” in high proof neutral spirits making it a superb base spirit for a variety of cocktails and mixed drinks.

At a time when beverages like bottled water, squeezed juice, energy drink, plant milk and kombucha were futuristic ideas, he had a vision of a sparkling beverage with natural ingredients that could be a healthier alternative to the heavily sugared and artificially coloured and flavoured soft drinks of the time. His work led to him to a sparkling drink based on an ancient Chinese medicinal blend. He developed and launched the Original Sparkling Herbal Blend first to New Zealand in 1987 and then to Australia in 1988. CH’I Drinks have built from this revolution over 30 years ago.

Drambuie

Drambuie is the world’s oldest whisky liqueur. A blend of aged Scotch whisky, spices, herbs & heather honey. Its origins can be traced to a secret recipe created for Bonnie Prince Charlie by his Royal Apothecary in the 18th Century. The name Drambuie is derived from Scots Gaelic ‘An Dram Buidheach’ and means “The Drink that Satisfies”. Nose : Notes of aromatic citrus spice, fragrant grass and butterscotch. Palate : Mouth feel is velvety soft with a tang of lemongrass and warming malty notes, berries and heather. Finish : A finish of shortbread, fresh herbs and the unmistakable long afterglow of the Drambuie elixir.

Cazcabel

Cazcabel tequila is created in an independent micro distillery in the town of Arandas, located in the highlands of the Jalisco mountains in Mexico. The elevation of Arandas ensures that the agave are well hydrated and that they have mineral and nutrient rich soil which allow them to grow larger than anywhere else in Jalisco. Once harvested we use autoclaves to steam our piñas and start converting the carbohydrates and starches into fermentable sugars. Autoclaves have many benefits including being able to regulate temperatures which allow for an even cook and a beautifully clean tequila. After fermenting in steel tanks for 10 days, Cazcabel is distilled using a combination of copper pot and steel stills and then chill-filtered to get rid of any impurities. The combination of these processes gives Cazcabel tequila its well rounded but amazingly smooth and balanced flavour.

Bitters are making their mark on the cocktail scene. In cities like New York, Boston and San Francisco, cocktail enthusiasts and bartenders are rediscovering long lost recipes and coming up with new signature flavors which help create the palate of the New American Cocktail. While living in San Francisco in early 2007, Avery and Janet Glasser used high proof spirit and a variety of herbs, peels and spices to create an extract of a traditional Mexican cooking sauce. This extract became the prototype recipe for the Xocolatl Mole Bitters. The summer of 2010 marked a dramatic rebirth for Bittermens: winding down previous licensing agreements, striking new partnerships, developing new products and most importantly, leasing a commercial kitchen. Today, Bittermens products can be found on almost every continent – we’re still working on Antarctica.

Opihr epitomises the exotic intensity of the Orient, awakening the senses to a new style of gin. Nose: A rich oriental spiced gin with a smooth perfume and sharp bursts of citrus.     Founders of Tiki Wine, Royce and Sue McKean bought an old 325 hectares sheep farm in Waipara and planted their first 60 hectares of wine. By the end of 2006 Waiata Vineyard in Waipara was fully planted, with potential for more land in otherregions in sight. In 2009 Tiki released their first vintage of Single Vineyard Sauvignon Blanc. As a company, Tiki are an indigenous NZ Maori wine producer that is committed to sustainable winegrowing. Tiki care for their vines under the guiding Maori principles of Kaitiakitanga: Guardianship, protection and preservation of the earth. “We knew pretty early on that we wanted to name our wine label TIKI.     Monte Alban Mezcal

    From the Mexican State of Oaxaca, Monte Alban Mezcal is produced with no added neutral spirits and no artificial additives like many other Mezcals on the market. For the uninitiated, both Mezcal and Tequila are derived from the juice of the agave plant, native to Mexico. Tequila must be a minimum of 51% agave and Mezcal a minimum of 80% agave juice.     Sazerac Rye Whisky

    The One and Only New Orleans Original. Sazerac Rye Whiskey symbolizes the tradition and history of New Orleans.   • Champagne Pommery

    Alexandre-Louis Pommery founded the Pommery champagne house in Reims in 1836. After his untimely death in 1858, his wife Jeanne Alexandrine Louise Pommery took over the reins of the company, whose style of champagne was still evolving. In the 1860’s, the champagnes available on the market were powerful wines, often heavily dosed and high in alcohol. Madame Pommery entrusted her Cellar Director, Damas Olivier, to develop elegant and balanced cuvees without adding excessive amounts of liquor. To achieve this style, Olivier focused on the subtleties of the crus, choosing them according to their specific qualities and ensuring their regular supply. The champagnes also needed the perfect environment for ageing, so Madame Pommery chose the core of the Gallo-Roman chalk quarries at the top of the Butte Saint-Nicaise in Reims and undertook arguably the largest construction project of the 19th century in Reims. She created an underground city capable of holding 20 million bottles— 18 kilometres of tunnels in total.

Eventually, Sarah and Ben Bonoma both left their corporate careers and took a leap into the unknown to establish Dancing Sands Distillery in 2016. Trading the corporate for the creative, and spreadsheets for stills, the Bonomas risked it all to follow their dream: producing world-class spirits in what is the most beautiful place on the planet. Like all great partnerships, Sarah and Ben are more than the sum of their parts. Sarah’s cutting scientific mind (she has a MSc in Genetics) is matched by Ben’s flavour-driven creativity. The result? A dynamic distilling duo on a mission to bring a part of Golden Bay to the rest of New Zealand, and the world. Golden Bay is a location like no other. It’s one of the most remote places in New Zealand, and as such, still enjoys a largely untouched environment.     ​The Balvenie distillery was built in 1892 by William J. Grant. The name Balvenie means ‘village of luck’. The company is still in the hand of the William Grant & Sons Ltd. Thanks to natural alchemy and centuries-old craftsmanship, The Balvenie is unique among single malts. Their whisky-making process is dedicated to maintaining the Five Rare Crafts and they are the only distillery in Scotland that still grows its own barley, uses traditional floor maltings and keeps both a coppersmith and a team of coopers on site. Over the years the Balvenie whisky became very popular and the distillery increased the number of stills from two to four.     ​The story of the building of Glenfiddich has the air of a Victorian fairy tale. It was in 1886 that William Grant of Dufftown decided to leave his position as manager of Mortlach and start up on his own. He had saved assiduously and, fortuitously, was starting his project just as Elizabeth Cumming was revamping Cardhu and replacing her old small stills. Along with his wife and nine children, William built his distillery near to the Fiddich river by hand. The first new make trickled out on Christmas Day, 1887. At a time when more distilleries had foundered than succeeded, and those which were being built tended to be bankrolled by brokers, bonders and blenders, his enterprise and stubborn belief was remarkable. He must have been a talented distiller, for his whole output was soon snapped up by Aberdeen blender and broker William Williams. Within 25 years, the family firm had 63 agencies internationally, proving them with their family blend, ‘Grant’s Standfast’. The firm is still wholly owned by the Grant family (now in its fifth generation), and has expanded to include three more malt distilleries [Balvenie, Kininvie and Ailsa Bay], a grain plant [Girvan] and other brands such as Monkey Shoulder and Hendrick’s gin. In 1963, after a dispute over grain supply (which prompted the firm to build the Girvan plant) the decision was made to bottle and promote Glenfiddich as a single malt, the first concerted effort to create a global malt brand.

    ​Thomas Dakin Gin is a classic style London Dry Gin which takes its name from the forefather of English gin, Thomas Dakin, who created the world’s first quality gin in 1761 in the North West of England.     Gosling’s

    ​In 1850, the first oak barrels of rum distillate arrived in Bermuda. Three years later, after much trial and error, the distinctive Bermuda black rum destined to be Black Seal was formulated and offered for sale. They didn’t call it Black Seal at first. In fact, up until the First World War it was only sold from the barrel, and most folks brought in their own bottles for a ‘fill up’. Eventually the black rum was sold in champagne bottles, reclaimed from the British Officer’s Mess, and the corks sealed with black sealing wax. Soon people began to ask for the “Black Seal”. Many years later the idea of the barrel juggling “Black Seal” was born. Over the years Black Seal Rum has become synonymous with Bermuda. It is the essential additive to Bermuda fish chowder, adds the island touch to Bermuda Rum Swizzle, and is the tempest in Bermuda’s favorite cocktail -‐ the Dark ‘n Stormy®.

    ​The recipe was developed as a tonic by German Dr. Johann Gottlieb Benjamin Siegert (died 1870), a Surgeon General in Simon Bolivar’s army in Venezuela, who began to sell it in 1824 and established a distillery for the purpose in 1830. Siegert was based in the town of Angostura, now Ciudad Bolívar, and used locally available ingredients, perhaps aided by botanical knowledge of the local Amerindians. The product was sold abroad from 1853 and in 1875 the plant was moved from Ciudad Bolivar to Port of Spain, Trinidad, where it remains. The exact formula is a closely guarded secret, with only five people knowing the whole recipe. Angostura bitters are a key ingredient in many cocktails. Originally used to help with upset stomachs of the soldiers in the Simon Bolivar army, it later became popular in soda water and was usually served with gin. The mix stuck in the form of a Pink Gin, and is also used in many other alcoholic cocktails such as Long vodka, consisting of vodka, Angostura bitters, and lemonade. Bitters can also be used in soft drinks; a common non-alcoholic drink served in Australian and New Zealand pubs is lemon, lime and bitters.

Monkey Shoulder was the name given to a temporary injury the malt men suffered many years ago.     ​Monkey Shoulder was founded by Malt Master David Stewart who has been with William Grant & Sons for 50 years. Brian Kinsman recently took-over and having worked as David’s apprentice for many years he is well qualified to take the reigns. Monkey Shoulder was first released in 2005 to a barrage of praise from industry, whisky lovers and bartenders alike. Bartenders in particular appreciate the light, sweet flavours that allow them to be creative with its use in cocktails and mixed drinks. It introduces the un-initiated to the flavours of Scotch as it has a light palate; rich smoothness and is not heavily peated or raw. It was first released in the UK and has since found its way to France, the USA and Australia. Being aged in first-fill bourbon barrels it has taken their sweetness and once it has been blended by Brian Kinsman and his team, it is given more time in vats to ensure consistency. For each batch they select only 27 casks for blending and they are only tapped when they are 100% happy with the period of maturation, only the master distiller knows the amount of time.   • Sailor Jerry

    Simply put, the guys who started the company were Sailor Jerry fans. They created Sailor Jerry Limited to keep alive the legacy of the man, Norman ‘Sailor Jerry’ Collins. They started it as a small mom and pop clothing brand in Philadelphia, collaborating with local artists to make leather goods, sneakers, t-shirts and other products featuring Sailor Jerry’s flash. Since Sailor Jerry spent half his life as a sailor (and the other half tattooing sailors) it was a natural move to create a spiced rum in his name. A cult started to grow around the rum, and pretty soon, it started to outsell anything else they made.

    ​Maybe because it was hauled around the globe by sailors or maybe because it’s just good, rum has traditionally been the most prolific of the world’s spirits. Although a few other places lay claim to their own varieties, the Caribbean is generally accepted as the heart of the rum world (which is why it’s where Sailor Jerry is and will always be distilled!) Rum has been intertwined with Caribbean culture for nearly 400 years, coming into existence alongside the sugar industry. The 1600s were the coming-out century for rum. Quality grew by leaps and bounds and so did people’s taste for it. By 1789, a hogshead of the finest Caribbean rum was chosen as fit for the first presidential inauguration of an upstart nation called the United States of America. Today’s Caribbean rum distillers have well over 200 years of experience perfecting the art of distillation, aging and blending. Adding spices to rum is an old sailor’s tradition. Those first rums were crude and harsh, so seamen would blend and mix in any spices they had on hand to improve the rum’s flavor. Today the harshness is no more, but the art of spicing rum is alive and well.

    Prince D’Arignac

    ​Armagnac is a distinctive kind of brandy produced in the Armagnac region in Gascony, southwest France. It is distilled from wine usually made from a blend of grapes including Baco 22A, Colombard, Folle blanche and Ugni blanc, using column stills rather than the pot stills used in the production of Cognac. The resulting spirit is then aged in oak barrels before release. Armagnac was one of the first areas in France to begin distilling spirits, but the overall volume of production is far smaller than Cognac production and therefore is less known outside Europe. In addition they are for the most part made and sold by small producers, whereas in Cognac production is dominated by big-name brands.

    Prince D’Arignac

    ​Armagnac is the oldest brandy distilled in France, and in the past was consumed for its therapeutic benefits. In the 14th century, Prior Vital Du Four, a Cardinal, claimed it had 40 virtues. Armagnac is traditionally distilled once at 52% of alcohol, which results initially in a more fragrant and tasty spirit than Cognac, where double distillation takes place. However, long aging in oak barrels softens the taste and causes the development of more complex flavours and a brown colour. Ageing in the barrel removes a part of the alcohol and water by evaporation (known as part des anges—ʺangels’ tributeʺorʺangels’ shareʺ) and allows more complex aromatic compounds to appear by oxidation, which further modifies the flavour. Alcohol is naturally reducing by an average of 0,4% per year depending on the characteristics of the cellars. When the Armagnac is considered as matured, it is transferred to large glass bottles (calledʺDame Jeanneʺ) for storage. The main difference between Armagnac and other spirits is that, due to its relatively low % of alcohol, it is generally not diluted with water and therefore is not added with flavour or colour enhancers as are the major other brandies.

The owner was a famed distiller, Michael Molloy. The location was well chosen - a rich agricultural and grain growing region, providing both the fine barley and pure water essential to the creation of good whiskey. Following the death of Mr Molloy, the distillery passed into the hands of his nephew Bernard Daly who renamed it the B. Daly Distillery. 14 year old Daniel Edmond Williams left his father’s farm to work in the distillery. His pay included being allowed to sleep over the distillery stables hayloft. Over the next few years he trained as a distiller. Daly’s son, Captain Bernard Daly, inherited the distillery. A keen sportsman, he was more interested playing polo and racing horses than in business. Consequently he appointed Daniel E. Williams as general manager - and a series of improvements began. He was a self-made man with a vision and the courage of his convictions. Staying true to his beliefs, Daniel brought the motorized cars and electricity to Tullamore, so he could make his whiskey his way. He also built a number of new warehouses, including a bonded warehouse (site of today’s Tullamore Dew Heritage Centre) and a bottling plant. He added his initials to his whisky to produce the name Tullamore Dew.

    ​Apple orchards and brewers are mentioned as far back as the 8th century by Charlemagne. The first known Norman distillation was carried out by ʺLordʺ de Gouberville in 1554, and the guild for cider distillation was created about 50 years later in 1606. In the 17th century the traditional ciderfarms expanded but taxation and prohibition of cider brandies were enforced elsewhere than Brittany, Maine and Normandy. The area calledʺCalvadosʺwas created after the French Revolution, but ʺeau de vie de cidreʺ was already called ʺcalvadosʺ in common usage. In the 19th century output increased with industrial distillation and the working class fashion forʺCafé-calvaʺ. When a phylloxera outbreak in the last quarter of the 19th century devastated the vineyards of France and Europe, calvados experienced a ʺgolden ageʺ. During World War 1 cider brandy was requisitioned for use in armaments due to its alcohol content. The appellation contrôlée regulations officially gave calvados a protected name in 1942. After the war many cider-houses and distilleries were reconstructed, mainly in the Pays d’Auge. Many of the traditional farmhouse structures were replaced by modern agriculture with high output. The Calvados appellation system was revised in 1984 and 1996.

    ​Broken Shed Vodka was founded in an old shed on Lake Wanaka. The Shed was where the formula was originally crafted and produced; it is now used for tasting events and offices. With a bit too much extra time on their hands, the founders started making vodka for themselves and their friends in the Shed. While the Shed was big enough to support vodka production for the small town of Wanaka, once launched in New Zealand, production was moved to a facility (still very small by U.S. standards) in Central Otago…it was a water bottling facility. Zaccheo, whose original mission was to produce a world-class red wine from the Chianti Classico appellation. An enologist by vocation, not by family tradition, Giovanni Carlo Sacchet fell in love with Tuscany, his adopted land. He is originally from the province of Belluno, a mountainous area at the northeast corner of Italy. After graduating from the School of Enology in Conegliano he moved to Tuscany where he began his professional experience contributing to the Tuscan wine Renaissance. It was destiny that he should meet Antonio Mario Zaccheo, with whom he shares the same passion and objectives. Together they embarked on a great adventure in Chianti Classico called ‘Carpineto’. Born to a family of winemakers, Antonio Mario Zaccheo’s experience began at the family farm first in Puglia then in Lazio, near Rome. Since his youth, he was involved in all aspects of grape growing and winemaking, as well as sales, never having any doubt that he was going to remain a winemaker. After graduating from high school he was convinced that the Chianti Classico region was the place for realizing his dreams. It was destiny that he should meet Giovanni Carlo Sacchet, with whom he shares a love for Tuscany as well as the same passion and objectives.     Hendrick’s is an iconoclastically produced small batch gin distilled in Ayrshire, Scotland. The unusual distillation process combined with the oddly delicious set of infusions yields a one-of-a-kind gin that is passionately loved by a tiny yet growing handful of individuals all over the world.No other gin is made like it. The delightful infusions of cucumber and Bulgarian Rose are one of the main features that set the taste of Hendrick’s apart from other gins. The Bulgarian Rose is extracted by gently pressing essential oils from the petals. The coup de grace – Cucumber, the essence of which is obtained by mashing then mixing the pulp with cold water.

    ​Hendrick’s Gin is a brand of gin produced by William Grant & Sons in Girvan, Scotland, and launched in 1999. In addition to the traditional juniper infusion, Hendrick’s uses Bulgarian rose and cucumber to add flavour. Hendrick’s gin is bottled in a dark blue apothecary-style bottle. Hendrick’s uses a blend of spirits produced from a Carter-Head Still (constructed in 1948), of which there are only a small number in the world, and a small pot still, originally built in 1860 by Bennett, Sons & Shears. Both have been restored to working order after being bought at auction in the 1960s by current William Grant Life President, Charles Gordon. The two stills produce strikingly different styles of gin due to their different construction and methods of distillation. The final Hendrick’s gin is a blend of these two spirits with an addition of Cucumber essence and Rose petal essence.Hendrick’s distils in miniscule batches of 450 litres, which gives our master distiller even greater control of her careful artistry.

That’s almost 200 years experience of fermenting, distilling, ageing, and blending, which come together to deliver truly smooth rum, quite different from any other rum produced in the Caribbean.

    Our rum is made from molasses, the dark, rich-smelling treacle-like liquid that is a by product of commercial sugar production. This sugary syrup, which varies from light brown to almost black in colour, is the first ingredient we have to get it right. The higher the sugar content of the molasses, the better the quality and this, in turn, produces a better quality rum. We only use molasses with a minimum 50% sugar content. To ensure that we get the best quality sugar cane we make sure that the canes are picked at just the right time, when the sugar content is at its very highest, we watch the butterflies land on the sweetest sugar cane. That’s how we know it’s ready to be harvested. The molasses is then fermented. A natural yeast consumes the sugar and turns it into alcohol. This metamorphoses of sugar into alcohol and carbon dioxide progresses until all the sugar is consumed. As the alcohol content increases, the yeast content diminishes. The personality of the spirit comes from the yeasts used – we use our own grown yeast, which is the same recipe used since 1930. What’s required next is to take this essence, which contains the soul of our rums, and distill it to concentrate the spirit and focus the flavours. We use up to five stills during the distillation process and distiller is always carefully selecting the flavours. After distillation, it’s time for the rums to be barrelled and aged.

In 1860, when the estate was purchased by Marquis Torrigiani, Villa Panna was converted into a full summer residence with artificial lakes, statues and decorations (Marquis Torrigiani created the first mineral water production facility, which shortly became the favourite table water of the Florentine elite). The adjacent chapel, which was commissioned by Grand Duke Francis I in 1572, prides in terracotta that can be attributed to the school of Della Robbia. During the period 2004-2007, Villa Panna was the object of meticulous renovation works that restored its original beauty. Today, Villa Panna - a great asset for the mineral water by the same name, still bottled here - functions as an outstanding meeting place for events and press conferences.

    Baron d’Arignac Cabernet Sauvignon

    ​Made by France’s largest wine producer, LGCF. LGCF is headquartered in Alsace and also has a large site south of Bordeaux. The company accounts of 17% of France’s bottles wine exports (excluding Champagne). The Vineyards located in Languedoc‐Roussillon, in the Aude region of France, where the soils of sand and alluvial deposits nature the vines. After harvesting, the grapes are de‐stemmed, crushed then undergo a hot maceration before being pressed. The wine is stored in vats, then racked, filtered and bottled. A medium intensity ruby red colour and a spicy bouquet with notes of red fruit and currants make this a round and ample wine with a very supple palate. Baron d’Arignac is a great value French imported red wine, suitable with a wide range of food including cold meats, Italian dishes, salad and cheese.
